Do You Act on Life Or React to Life?

I used to know a woman, still do as a matter of fact, who could never act on life but simply reacted to life.  Oh yes there is quite a difference.  She is now 75 years old and just lost her husband about a year ago.  She never knew how to make decisions she always let her husband or her children do that for her.  She didn’t even know what she liked.  It was as if she had to ask them before she could give you an answer about anything. I don’t think she can tell you what her favorite flavor of ice cream is even today.  She always waited to see what would happen at work, in life etc.  She simply reacted to whatever life handed  her.  There was not a lot of planning by her.  I have actually known a few people like this and to a great extent we may all have some of this in us.

If you wait until things happen good or bad and you don’t take the bull by the horns, so to speak, then you could be reacting to life.  I think this is someone, and by someone I often mean me,  who maybe doesn’t have the confidence or courage or just the ability to act.  Maybe you wait to see what will happen.  Maybe you wait to see what others will do.  This can be some of the most dangerous things anyone can do.  Maybe you think a situation will get better if you just leave it alone and wait and wait and wait.  Oh hello 2025 how did you get here so quickly? you might become lazy by not acting, you might let your health and well being start to slip.  I think sometimes when I get this placid if feels as though things have become so enormous I just don’t want to deal with it at all.

You could actually spend hours, days and months sitting around worrying about something that might never happen but by golly when it does then you will react to it and not one minute sooner!!!  But it will be there in the back of your mind lurking about when all it might take is a few minutes of your time to handle it and act on it.

When you react to life this way you have no choice but to react because you have waited until the last minute or not at all and as you know life waits for no one.

I have found myself reacting to life lately instead of acting.  I don’t like it.  I feel unprepared when I do this.  I feel like life is sneaking up on me and I am not ready.  Bam!!! in your face ready or not.  I think this happens for me when I am stressed, overwhelmed by work, feeling indecisive and insecure.  Will I make the right decision? What if? What if? What if?

I used to be more of a worrier than I am now I guess that comes with age.  I had this little “what then” game I played.  What if my house burned? what if I lost my job? what if me or my husband got really sick? ( I never played that game about losing a loved one because I have lost and there is no what if about that, you just deal with it whatever way you can)   With this game I would imagine if this or that particular thing really happened and then what would I do.  I would say and then what would I do? and then?  I played out the entire scenario until I had an answer,  This often helped me alleviate some of the worry and anxiety I felt.  At this point you’re probably questioning my sanity don’t worry I do all the time.    I say all of this because sometimes worry keeps us from acting on life instead of having to react.

When I have something difficult that I know I am not dealing with I try a few different things.
1. I break it down into manageable doable steps.  Even if that first step is grabbing a piece of paper and making a list of the steps that need to be done.  This helps me to realize that as I complete each step the task is getting more and more doable.  You should have a notes feature on your phone.  This is where I keep a lot of my notes so that I can glance at them frequently and maybe take care of something while I have a few extra minutes.  If it takes you a lot of time and steps, so what? you are getting it done you are acting instead of reacting.

2. If I am really worried about something that seems to be on my mind a lot throughout the day I plan a worry time for this.  I know it sounds silly but I was given this advice from a good friend long ago and it really works.  Sometimes we feel guilty if we are not worrying about something that we think we should be worried about.  This will give you the freedom to put it off until later and then you may find it isn’t even worth worrying about as much as you thought it was.

3. Stop procrastinating!!!! I know this is so much easier said than done.  I am the Queen of procrastination.   And it really helps to “Eat That Frog” first thing in the morning.  Check out this book and my blog post about it and you will understand what it means to “Eat That Frog”

4. Take a mental health break.  Take a walk, pet some fur babies, lay on a blanket in your yard and look at the clouds, read a book.  Do anything that will help you regenerate you enough to want to act on your life instead of simply reacting to what it brings you.

All of the beach pictures were taken last year on my trip to Wrightsville Beach near Wilmington North Carolina.  I love this beach me and my husband go every year.  We will be going in October this year a little cool for a beach vacay but I can’t wait!!!!

A Quick Trip to Abingdon Virginia and a Long work week.

Hello hello.   A little over a week ago I took off to Abingdon Virginia for a few days to meet with some of my fellow Attractions folks. We met in Abingdon and stayed at the beautiful Martha Washington Inn. The Inn is very old and was built around 1812. I also heard it was haunted but I didn’t see anything to prove that true.  And I didn’t want to see anything thank you very much.

The Martha Washington Inn is beautiful and has been many things throughout the years. It was built in 1832 as a private residence for General Francis Preston following his successes in the War of 1812.  It was a private residence for him and his wife Sarah and their nine children.

Amazingly the residence was built for under 15,000.00.  In 1858 the home was purchased as an upscale college for young women.  In honor of the first lady of our nation , the school was named Martha Washington College. “The Martha” by locals.  The college operated for over 70 years through the years of the Civil War and the Great Depression.

The “War Between the States” was soon to have a dramatic effect on the college.  Schoolgirls became nurses and the beautiful grounds became training barracks for the Washington Mounted Rifles. The College was a makeshift hospital for the wounded, both Confederate and Yankee.   Because of the Great Depression, typhoid fever and a declining enrollment the Martha was closed in 1932, standing idle for several years.

In 1935, The Martha Washington opened as a hotel and  hosted many illustrious guests.
In 1984, The United Company, representing a group of dedicated businessmen, purchased The Martha Washington and began a multi million dollar renovation.

In 1995, The Martha Washington Inn joined The Camberley Collection of fine historic properties.     Wow what a story right????

The Barter Theatre is just across the street from the Inn. We were treated to the production of AIN’T MISBEHAVIN’ the Fats Waller Musical Show and it was awesome.

A little history of the Barter Theatre:
During the Great Depression a young actor named Robert Porterfield returned to Virginia with an idea to exchange produce from farms and gardens to gain admission to a play.

On June 10, 1933, Barter Theatre opened its doors with the price of admission being the equivalent amount of produce. It was a  great success and for the first production every seat was filled. For additional history check out http://www.bartertheatre.com.

The following Monday we had all day meetings.  This is a wonderful time for all of the attractions to share what is working and not working for them.  It is a great learning experience.

On Monday night we visited the Birthplace of Country Music in Bristol. I love this place It was my second visit and I enjoyed it as much as the first. I know you are thinking that Nashville is the Birthplace of Country Music but just visit this museum and you will find out that it really was Bristol Virginia.

 

Later that night we ate at a wonderful restaurant called 620 State Street which just happens to be the address as well.  This is an Asian Fusion Restaurant with wonderful food, drinks, and appetizers.  Check it out if you are in the area.

I returned home on Tuesday night and went right back to work on Wednesday.  With the Labor Day weekend approaching we were very busy at work and I worked Saturday as well.  I took Sunday off and spent the day catching up on laundry and doing a little cooking.  I am so tired of fast food.  I also worked on Labor Day Monday so to say I am a little weary is an understatement.  I have basically been going home and crashing every evening.

I recently rejoined the gym I had belonged to before but I honestly have only been there a couple of times since I joined.  I am going to change that this coming week.

I do have a long weekend off, Friday, Saturday and Sunday.  I have a few things planned but I am going to do a lot of chilling as well.

I  have a question for you:  Do you think you act or react to life?  Think about it and I will be posting something on that over the weekend.

A Fun Day in Sweetwater

Hi Y’all last week on Saturday I went with my friend Lorie to downtown Sweetwater to visit and shop the antique shops.  This past year a coffee shop and Italian Restaurant have been added so we wanted to check those out too.

We decided to do an early lunch at the Italian restaurant Vitorinos. What a charming place with lots of wood and industrial accents.  You can have piazza, specially made to order, pasta, or what we chose the most AMAZING calzone. I swear four people could have shared this calzone. I got the Italian meatball, with pepperoni and cheese. It was fabulous.

After a leisurely lunch we started our walk through town to check out some of the antique and specialty shops that Downtown Sweetwater is famous for.

This shop, Honeysuckle Hollow, had a little bit of everything. A great place to purchase gift items for Birthdays, Wedding or Baby Showers or anything seasonal.  You won’t really find a lot of antiques in this shop but still some beautiful items that you will want to have.

The next shop was Natural Element Interiors. I found a table I love and want. It was 50% off and gorgeous but maybe a little too big for my kitchen. I use my dining room as a home office and small library and also keep my piano there so no chance of making that a dining area now. I have a kitchen table and it is fairly small but just look at this beauty.  Try to imagine it without everything on it ha ha.

This shop has a blend of antiques, furnishings, and gifts and it is so beautifully designed.

Pennington Home was our next stop. All I can say here is elegance and style.  Oh man this shop is absolutely beautiful. You have to check it out.

 

A few Halloween teasers were put out but check out the rest of it.

Next stop was Cones Cupboard Antiques. Some remarkable antiques in this shop. Also a lot of awesome gift items.

Next stop was Sweetwater Antiques.   I love looking at the antiques in this shop. Is it bad if I say I remember using some of them.  Yikes!!!

Next stop was Dogwood Lane Boutique.  No antiques here but some amazing gift items.  Kelli will be happy to help you find what you are looking for.

Next you have to visit Gallery On Main. This shop houses works of many local artists.  Everything is beautiful and placed perfectly.

 

So after visiting all the shops we made our way back to this coffee shop.

Sweet Station Bake Shop is amazing. Because it was 90 degrees we didn’t get coffee we got a couple of smoothies. I got mango and Lorie got triple berry.  They were yummy.

Making Sourdough Bread

As promised I am going to tell you step by step how to make sourdough bread. This is kind of a longy so grab a cup of coffee or a glass of wine or whatever your drink of choice might be.

Now the first thing I have to tell you is that you must have a starter.  I know you might be thinking what the crap is that?

The starter is basically the yeasty part of your sourdough bread. It actually takes two days to make bread this way (once you have your starter)  but I think it is totally worth it and somehow both soothing and satisfying to go through the process. Also each cup of starter makes three loaves of bread so you can freeze some or share, what you don’t eat immediately, with your friends.

The longer process of making your bread this way causes bacterial actions on the starch and protein in the dough. This increases the length of time your bread will be good to eat and it will give it a better flavor.

Who starts the starter or the mother bread?  How do you get this starter? There are two ways:

1. To make a bread starter a baker begins with a mixture of flour and warm water that is set out in the open air to collect yeast.  This process can take several times before a yeast actually appears. You would then take a cup of bread flour with one cup of hot, but not boiling, water, stir it and put it in a warm place and cover it with a damp towel.  This process has to be done every 24 hours. After each 24 hour period the mixture is fed and a cup of the starter is thrown out and the process starts over.  Once you have the starter going you don’t have to continue this step you just continue to feed the starter to keep it alive. More on that in just a minute.   Once a starter has taken it is usually kept refrigerated to slow the growth of the yeast.  You can tell when the starter is good to go because it will have a frothy foam like texture at the top of the jar or around the side of the bowl or whatever you have the starter in.  I now keep my starter in a jar and it makes it easy to feed regularly and just stick it back in the fridge.

2.  You ask a friend for a cup of their starter so you don’t have to go through getting the starter started   ( I can be your friend.  I have at least one cup to get rid of every week)

I got my first starter from a woman I was going to church with about 20 years ago, Ms Margaret. she had baked some of this bread and brought it to Mark’s grandmother.  I thought it was the best bread I had ever eaten.  Some people do not like sourdough bread it is just a matter of taste.  I immediately ask her for the recipe and she said “ well I’ll have to give you some starter”

Through the years I have had several starters, I am not sure if this is just a southern thing or not, I let many of them die because I didn’t feed them properly or on time.  Feed it? What?  Yes you have to keep feeding your starter every 3-7 days to keep it alive.  I admit my starter died several times.  Each time I would return to MS Margaret, rather sheepishly, and mumble uhmmmm I need more starter.  She was always more than happy to give me some and this is why I am happy to share mine.  When I go on vacation I give my starter to a family member to feed.  I have had this same starter for about ten years!!!! Can you believe it?  I think the longer you use from the same starter the better the bread.  That is another reason I love sharing the starter.  I even had Ms Margaret come back to me for bread starter many years later.  She had to go out-of-town for a couple of months and couldn’t feed hers.  This was kind of like the teacher returning to the student Ha Ha  I was so happy to share it back with her.

Ok here is the process after you have the starter.  The starter must be kept in the refrigerator until the day you take it out to feed it (this should be every 3-7 days) this slows the process of the yeast.

On the morning that you feed your bread take the starter out of the refrigerator and add one cup of VERY hot water, not boiling, to the starter.  You may keep it in the same jar that you have used to store it in the refrigerator.  Then add three tablespoons of potato flakes, any kind of instant potato flakes will do, and 3/4 of a cup of sugar.  Mix this together with a wooden spoon and leave it out with the lid off or very loose for at least 6 hours.  I am not sure you absolutely have to use a wooden spoon but that is what Ms Margaret told me to do so I always have.

After the starter has set out all day, or all night depending on when you choose to do your bread, you stir it again and pour one cup of the starter out of the jar.  This one cup of starter is what you will use to make your bread.  If you do not want to make bread you throw that cup away or give it to someone who wants to start making their own bread. you put the rest of the starter back in the fridge.

For the bread, mix together:

1 cup of starter
1/3 cup of sugar
1/2 tsp of salt
1/2 cup of vegetable oil
1&1/2 cups of very hot water (not boiling)
6 cups of bread flour ( you must use bread flour)

 

Mix all of this together in a large mixing bowl and mix until all the liquid ingredients are absorbed.  You may have to use your hands to knead this a little.

After you have formed the dough into a ball. Coat the inside of a separate mixing bowl, make sure the size of the mixing bowl will allow the bread to more than double in size.

 

Cover the bowl with a paper towel or tea towel. It will take 6-8 hours for the dough to rise. It usually helps to keep it out of a drafty area. I like to sit mine on my kitchen table where the sun shines in.

After the dough has risen to the top of the bowl empty it out onto a floured surface punch it down and knead it for a few minutes. I like to go ahead and divide mine into three smaller balls before punching it down and kneading it.  This just makes it easier to handle.

Spray three medium-sized bread pans with non-stick spray and put a ball of dough into the center of each bread pan. Brush the top of the dough with Wesson oil.  Cover again with paper towel or tea towels and let it rise to the top. This usually takes another 6-8 hours depending on the temperature inside your house. The bread rises better when it is  warmer.

 

Pre-heat your oven to 350 and bake the bread for 30 minutes.

 

This is the schedule I use for mine:

Feed bread in the morning leave out all day

make the bread dough late that evening and let it sit out all night

The next morning punch the dough down and knead it and put it into the pans

let it sit out all day to rise and then bake it in the evening.  As soon as it comes out of the oven dump it out onto paper towels and spread butter all over the bread.

You can do so many things with the sourdough starter. I sometimes add cinnamon and pecans and bake it and add a glaze as soon as it comes out of the oven.   Yummy Yummy!!!
